Welcome to Cupcakes with Coffee - Why I Do It Anyway
Introduction
Let me be honest: I almost didnât launch this blog.
I had a dozen excuses:
Not enough time.
Too many other blogs already out there.
That lovely imposter syndrome whispering, âWho are you to write this?â
But then I did what I always come back toâI poured a cup of coffee, grabbed a cupcake (for courage, obviously), and told myself: DO IT ANYWAY.
WHAT I HOPE THIS BLOG WILL BE ABOUT
Cupcakes with Coffee is a cozy, motivational space for the try-ers. The dreamers. The âIâm tired but I still careâ kind of people. This isnât about being perfect or polished. It's about embracing our life - struggles and all. And most importantly, exploring the deeper side of our mental health.
Itâs about showing up scared, starting small, and doing the thing even when you donât feel ready.
Youâll find stories hereâsome messy, some dark, some funny, some sweet. Youâll find reminders that effort matters, that progress is enough, and that itâs okay to spill your coffee while reaching for something more.
WHERE WE'RE HEADED
Iâll be sharing:
- Motivational posts
- Real-life reflections and imperfect lessons
- Fun cupcake and coffee combinations
-Â And always, the gentle push to 'do it anyway'
YOUR INVITATION
Maybe you're in the middle of something hard.
Maybe you're dreaming of starting something new.
Maybe you're just trying to make it through the day.
Wherever you areâyou're welcome here.
Bring your coffee. Bring your cupcake. Bring your whole, messy, beautiful self.
Letâs do this⊠even if we have to do it scared.
Letâs do it anyway.
Love, Kate
Now let's talk cupcakes.
Cupcakes
Cupcakes with Coffee Style:
Cupcakes are tiny acts of joyâsoft, sweet reminders that life doesnât have to be big or perfect to be worth celebrating. Theyâre the reward after a hard day (mid-day, if necessary), the comfort during a messy one, and pure bliss in edible form. Paired with a good cup of coffee, theyâre not just dessertâtheyâre a moment of pause, a little cheer, and sometimes, the reason you keep going.
"There is nothing a strong cup of coffee and a cupcake can't fix."

Cupcakes
This amazing recipe is the creationÂ
of Sally's from Sally's Baking Addition.
These are by far MY FAVORITE chocolate cupcakes. HOWEVER, I am a fan of the JUMBO cupcake (shocker), so my yield is about 8.
My Takeaways:
- DO NOT omit the Guinness
- If you chose to bake in jumbo form, you'll need to increase the baking time (I suggest starting with 30 mins then increase time as needed) until they are baked through
- I also tend to make my frosting more whip than buttercream but that's up to you!
Coffee
For this cupcake, I strongly suggest pairing it with simple cappuccino. Try a Homemade (and Handmade) Cappuccino. Recipe here.
A few tidbits:
The name "cappuccino" is inspired by the Capuchin friars, as the color of the drink resembled the color of their brown hooded robes. The word "cappuccino" is Italian for "little hood". The drink evolved from a 17th-century Viennese drink called Kapuziner. The modern cappuccino was developed in Italy after the invention of the espresso machine in the early 1900s.Â
ENJOY!
"Happiness in a cup."
Conclusion
This space is for the tired dreamers, the soft-hearted fighters, the late bloomers, the messy middles. It's for anyone who's trying to grow something beautiful in less-than-perfect conditions.
So WELCOME to Cupcakes with Coffee - a little blog with a LOT of heart.
Let's sip, share, stumble, and keep 'doing it anyway!
