Introduction

Let me be honest: I almost didn’t launch this blog.

I had a dozen excuses:


Not enough time.
Too many other blogs already out there.
That lovely imposter syndrome whispering, “Who are you to write this?”

But then I did what I always come back to—I poured a cup of coffee, grabbed a cupcake (for courage, obviously), and told myself: DO IT ANYWAY.


WHAT I HOPE THIS BLOG WILL BE ABOUT

Cupcakes with Coffee is a cozy, motivational space for the try-ers. The dreamers. The “I’m tired but I still care” kind of people. This isn’t about being perfect or polished. It's about embracing our life - struggles and all. And most importantly, exploring the deeper side of our mental health.


It’s about showing up scared, starting small, and doing the thing even when you don’t feel ready.

You’ll find stories here—some messy, some dark, some funny, some sweet. You’ll find reminders that effort matters, that progress is enough, and that it’s okay to spill your coffee while reaching for something more.

Cupcakes with Coffee Style:

Cupcakes are tiny acts of joy—soft, sweet reminders that life doesn’t have to be big or perfect to be worth celebrating. They’re the reward after a hard day (mid-day, if necessary), the comfort during a messy one, and pure bliss in edible form. Paired with a good cup of coffee, they’re not just dessert—they’re a moment of pause, a little cheer, and sometimes, the reason you keep going.

This amazing recipe is the creation 

of Sally's from Sally's Baking Addition.


These are by far MY FAVORITE chocolate cupcakes. HOWEVER, I am a fan of the JUMBO cupcake (shocker), so my yield is about 8.


My Takeaways:

  • DO NOT omit the Guinness
  • If you chose to bake in jumbo form, you'll need to increase the baking time (I suggest starting with 30 mins then increase time as needed) until they are baked through
  • I also tend to make my frosting more whip than buttercream but that's up to you!

Cappuccino

For this cupcake, I strongly suggest pairing it with simple cappuccino. Try a Homemade (and Handmade) Cappuccino. Recipe here.


A few tidbits:

The name "cappuccino" is inspired by the Capuchin friars, as the color of the drink resembled the color of their brown hooded robes. The word "cappuccino" is Italian for "little hood". The drink evolved from a 17th-century Viennese drink called Kapuziner. The modern cappuccino was developed in Italy after the invention of the espresso machine in the early 1900s.

A Little About Me

Hi, I’m Kate—writer, encourager, coffee sipper, and cupcake enthusiast. I started Cupcakes with Coffee as a form of therapy. For a long time, I lived in survival mode—pushing through, people-pleasing, and carrying weight that wasn’t mine to carry. Writing became the place where I could finally set it all down. And focus on my two favorite passions—coffee and cupcakes.

My blog is my way of turning pain into purpose. It’s my apology to myself for settling for less than I deserved, and my reminder to anyone reading that you don’t have to have it all together to move forward—you just have to do it anyway.

I wanted to create a space that felt real. A place where the messy parts of life could sit right alongside the cozy, the funny, and the motivating. Because that’s how life actually is—a mix of hard truths and small joys. That’s why I started this website and more importantly this blog: to write through it, to share it, and maybe, to help someone else feel a little less alone while they figure it out too.
